Garlic Shrimp & Mushroom Pasta

Want to try a delicious dish? One that you can still get your pasta fix without the super heavy cream sauce? Then try this wonderful recipe. It tasted just as good, if not better the next day for left overs!

Mmmmmm!

8 oz. uncooked angel hair pasta
1/2 lb. sliced fresh mushrooms
1/2 medium onion, chopped
1/3 c. olive oil
4 garlic cloves, minced
1 lb. cooked medium shrimp
1/2 c. chicken broth
1 Tbsp. italian seasoning
1/2 tsp. salt
1/2 tsp. pepper
1 sm. carton grape tomatoes, chopped
1/2 c. grated parmesan cheese, divided

Cook pasta. Meanwhile, saute mushrooms and onion in oil in a large skillet until tender. Add garlic, cook 1 minute longer.
Add the shrimp, broth, and seasonings. Bring to a boil, reduce heat; cook and stir for 4-5 minutes or until sauce is slightly thickened.
Stir in tomatoes and 1/4 c. of cheese. Drain pasta; toss with shrimp mixture. Sprinkle with remaining cheese.
